Jeremy Biasiol new Chef De Cuisine at Jade On 36, Pudong Shangri-La, East Shanghai

Jeremy Biasiol_1Chef Jeremy Biasiol, a French national from Lyon, joins Pudong Shangri-La, East Shanghai as chef de cuisine at Jade on 36 Restaurant. Bringing with him 28 years of experience in French gastronomy and his own style, Chef Jeremy previously worked at Michelin-starred restaurants around the world and ran a one-starred Michelin restaurant in Hong Kong.

Chef Jeremy attended cooking school in Lyon when he was 15 years old and started his training with some of the most famous chefs in France, including Paul Bocuse, Pierre Orsi, La Mere Brazier and Georges Blanc.

The Master Chef Alain Ducasse offered the 17-year-old Jeremy a job at one of his new restaurants in Paris and their relationship continued for over 11 years.  Chef Jeremy worked at most of Mr Ducasse’s restaurants around the world, including Monte Carlo, Paris and New York. He also participated in the opening of three of restaurants in Paris and London, including Plaza Athenee (three Michelin stars) and The Essex House (three Michelin stars).

Working with Mr Ducasse helped Chef Jeremy realise the importance of understanding produce and respecting what nature has to offer during the different seasons in a year.  In 2010, the Commanderie Des Cordons Bleus de France, a prestigious gastronomic society that aims to promote French cuisine and recognise distinguished talents in the industry, made Chef Jeremy one of its few selected members.

Chef Jeremy presents European fusion food with a twist of Asian taste at Jade on 36 Restaurant, and enhances the restaurant to Michelin standards.  He takes pride in his newly defined European fusion food with a twist, in which he likes to present new flavours based on high-quality ingredients and exotic inspirations and tastes. He has a simple philosophy of respecting fresh produce, which means choosing and using only the freshest seasonal ingredients for his creations.

“I respect the original flavour and nature of each ingredient and I like to use local fresh produce.  As a chef, we need to first respect nature and what it has to offer, and it’s one of our professional moralities,” said Chef Jeremy.

Jade on 36 Restaurant is, like Shanghai, classic, yet modern and contemporary.  Featuring European fusion cuisine with a twist, the futuristic design of Adam D. Tihany and the views of the city, Jade on 36 Restaurant captures the spirit of modern Shanghai.

Pudong Shangri-La, Shanghai is located in the Lujiazui finance and trade district of Pudong, or East Shanghai, which is being developed to become the country’s business hub. The hotel is located on the eastern bank of the famous Huangpu River, overlooking Shanghai’s legendary waterfront strip, The Bund. A historic landmark famous the world over, The Bund was Shanghai’s financial centre in the early 1890s. Today, it is a showcase of turn-of-the-century architecture.
