Four Seasons Hotel Macao, Cotai Strip names Aidan Chung Director of F&B

Aidan Chung_2Four Seasons Hotel Macao, Cotai Strip announces the appointment of Aidan Chung as its Director of Food and Beverage. In this multi-faceted role, Aidan is responsible for overseeing the Hotel’s entire food and beverage operations, encompassing five distinct dining venues and bars, in-room dining services and more than 2,500 square metres (27,000 square feet) of meeting, conference and banquet facilities.

With years of leadership experience, along with a passion for the hospitality business, Aidan has also been entrusted with enhancing the food and beverage capacity at Four Seasons Hotel Macao in terms of service delivery, profitability and overall guest experience.

Prior to this appointment, Aidan served as director of food and beverage at the Westin Siray Bay Resort & Spa in Phuket, Thailand. For 2.5 years, he managed the resort’s food and beverage department, with six dining venues and a team of more than 70 associates. During his tenure, he elevated overall guest satisfaction rates and reached financial targets through careful cost analyses, monthly forecasts and annual budgeting. He also looked after associate training, and assumed a leadership role on the hotel’s executive committee, offering input for key strategic decisions.

From Hong Kong but born in the Netherlands, Aidan gained his hospitality experience in top-tiered luxury hotels across key destinations in Asia Pacific and the Netherlands. The latter includes a position as the bar, brasserie and lounge manager at the Intercontinental Amstel Amsterdam. Among many achievements, he helped a Michelin starred executive chef to implement new menu concepts in the Amstel Bar & Brasserie, which was listed in the Gault Millau fine dining guide during his two years at the hotel.

Other positions include beverage and food service manager at W Hong Kong, and food and beverage service manager at the Westin Beijing Financial Street, China. At both hotels, which were newly opened flagship properties of their respective brands, Aidan played instrumental roles in the pre-opening stages, implementing vital operational systems; participating in budget planning; and managing human resources, including recruitment, training and team building. His eye for detail, work ethic and business acumen produced positive results, earning him several promotions. At the Westin Beijing, for example, Aidan advanced from assistant restaurant manager to manager after one year. Another year later, he was subsequently appointed as the food and beverage service manager ahead of the highly anticipated 2008 Summer Olympics.

Fluent in English, Dutch and Cantonese, with a working knowledge of Mandarin, French and German, Aidan holds a Bachelor of Science in Business Administration from Stenden University in the Netherlands. He also participated in an International Hospitality Management and Mandarin Chinese exchange program at Beijing College of Tourism, China; and was a management trainee, covering multiple disciplines, at Marco Polo Hong Kong Hotel. In his spare time, Aidan enjoys golf, football, music and dining.
