FAZENDA NOVA, ALGARVE, PORTUGAL
This chic, pared-down boutique hotel has brought a dash of sophistication to the rural eastern Algarve. Set amid carob, almond, olive and pomegranate trees, the 19th-century house has been beautifully renovated by British owners Hallie and Tim Robinson using driftwood, polished cement and varnished eucalyptus wood. There are three big bedrooms in the main house; all have simple Balinese furniture and duck-egg-blue bathrooms with rain showers and REN goodies. At the heart of the house is a cosy bar with an excellent selection of Portuguese wines and a restaurant where the menu reflects the season and the fruits of the garden; fresh seafood is put to good use in regional specialities such as cataplana. Dotted around the gardens are a further seven suites and a penthouse, each with private outside space. Bordered by lavender and rosemary, the swimming pool is a wonderful spot to survey all that surrounds you, which is quite simply bucolic tranquility as far as the eye can see.
