Matthew van der Zwan promoted to Executive Chef at Singapore Marriott

Matthew van der Zwan has been promoted from Executive Sous Chef to Executive Chef at the Singapore Marriott Hotel. He leads a kitchen team of 100, oversees the hotel’s five award-winning restaurants, in-room dining, banquets and events, and is responsible for all menu development and food & beverage quality control.

Started his culinary career at sixteen, Chef Matthew’s profession has taken him the length and breadth of Australasia – from the iconic country estate of Mount Lofty House in the Adelaide Hills, to three of Melbourne’s premier establishments; Sofitel Melbourne, The Australian Club and The Point Albert Park Lake, at the latter of which he was awarded 1 Chef’s Hat by the Age Good Food Guide.

In Asia, he has helmed the kitchens of the award-winning Mesa-Manifesto Restaurant and Tapas Bar in Shanghai as well as Carlson Hotels in Beijing, Tianjin and Shanghai, from where he joined Singapore Marriott Hotel as Executive Sous Chef in August 2012.

With almost 20 years of experience, his career highlights include cooking for leading global politicians at the World Economic Forum in 1998 and 2010, as well as serving VIP guests at the Sydney Olympics in 2000.
