The iconic luxury hotel, Park Hyatt Tokyo, is pleased to announce the appointment of Steffan Heerdt as Chef de Cuisine of the hotel’s famed restaurant, New York Grill & Bar.
Dramatically perched on the 52nd floor of the hotel, New York Grill offers stunning views of the city of Tokyo through floor-to-ceiling glass windows, and a delectable menu featuring a wide selection of prime quality Japanese beef and fresh vegetables, locally sourced and grilled to perfection.
Born and bred in the German countryside, Chef Steffan’s passion for cooking came at an early age. His grandmother taught him how to cook using fresh ingredients from their garden, and by the time he was 16, he had already received an apprenticeship at Crowne Plaza Hotel. Chef Steffan has been working in Park Hyatt hotels for 13 years, joining Park Hyatt Hamburg in 2003, before moving onto Park Hyatt Zurich in 2006, where he became the Chef de Cuisine at Parkhuus.
In 2014, Chef Steffan went to Asia for the first time and became Chef de Cuisine of Park Hyatt Seoul’s signature restaurant, Cornerstone. Making the decision to continue his culinary career in Asia, he has now accepted his recent appointment as Chef de Cuisine of New York Grill & Bar at Park Hyatt Tokyo. Chef Steffan Heerdt replaces Federico Heinzmann, who is returning to Park Hyatt Seoul as Executive Chef.
Of the exciting new chapter in his career, Chef Steffan said, “Cooking for me is all about seasonality, flavor and texture. As seasons change, menus evolve. I will be seeking inspiration from the beautiful selection of the seasonal produce that is available at the time and incorporate them into my dishes with New York Grill flair.
