Sean Marco named as Executive Chef for Crown Towers Perth

Crown is delighted to announce the first of many executive appointments at Crown Towers Perth which opens on 1 December this year, with acclaimed chef Sean Marco named as Executive Chef.

Bringing two decades of global experience to his new role, Sean has already influenced hundreds of apprentices and chefs at Crown as Executive Sous Chef. Now he will lead a team of 120 chefs at Perth’s most prestigious hotel to deliver an unparalleled dining experience for local and international guests.

The design of Crown Towers kitchens and equipment commenced in 2014, with Sean actively involved in developing the state-of-the-art facilities which will deliver a new level of efficiency and service quality. As part of the custom design, an elegant dining room has been situated in the heart of the banquets kitchen allowing clients of Crown Ballroom to receive a unique menu tasting experience. Seating up to 12 guests, the room features glass windows for guests to see the chefs at work.

Over the coming months Sean will work closely with Chef de Cuisines on training and opening schedules, ensuring Crown Towers delivers on its promise of the highest service standards from Day One.

“Right now we are building our team of the finest chefs and finalising the incredible restaurant and banquet menus which will showcase the highest quality produce. We are on the home stretch and we can’t wait to deliver an unforgettable dining experience, the likes of which haven’t been seen before in Perth,” said Sean.

Crown Perth Chief Operating Officer – Food, Beverage and Entertainment, Andrew Hill said the world-class dining offering will reinforce Crown Towers Perth as Australia’s best hotel.

“Sean has played an integral role in Crown Perth’s culinary team since 2006 and will now pilot a new era at our resort; responsible for four new restaurants including Epicurean, The Waiting Room, Crystal Club and Crown Towers Pool Bar, as well as banquets kitchens which will cater for more than 3,200 diners per night and an extensive room service menu,” Andrew said.

A native of the United Kingdom, Sean has cooked for Queen Elizabeth II, worked at renowned hotels and Michelin starred restaurants, and has set up many new restaurants and dining rooms.

A successful Mentor, Sean has also guided the careers of many aspiring chef professionals, and as part of Crown Perth’s award-winning training program, seven of its most accomplished apprentices will join Sean’s culinary team in Epicurean, Crown Towers Pool Bar, Room Service, and Banquets Pastry division.
