Chef Yap Poh Weng appointed Executive Chinese Chef at Conrad Macao’s Dynasty 8 restaurant

Yap Poh WengConrad Macao’s Dynasty 8 restaurant has appointed Yap Poh Weng as Executive Chinese Chef. Located in Sands Cotai Central, Dynasty 8 offers award-winning Chinese cuisine for discerning guests from all around the world. In addition to overseeing Dynasty 8, Chef Yap will also look after the Chinese banqueting kitchens for Sands Cotai Central an integrated resort located on Macao’s Cotai Strip.

Originally from Malaysia, Chef Yap has enjoyed a long culinary career spanning almost 30 years, working for many five-star luxury hotels and restaurants in Malaysia, Beijing, Shanghai, Hangzhou, Guangzhou and Macao, SAR China. During his career Chef Yap was instrumental in leading the way for fine Chinese dining including taking the helm at the legendary Chinese restaurant Yan Yu in Guangzhou, the award-winning Grand Dragon Chinese Restaurant in Hangzhou, as well as the world-famous restaurant Whampoa Club in Beijing and Shanghai.

He is one of the few master chefs that originally trained in the different varieties of dim sum making. During his time in Hangzhou, he received the honour of being named one of “China Top 50 Celebrity Chefs” for Food and Wine magazine, as well as a diamond-rated chef by both the Asian Diamond Chef Association and the American Academy of Hospitality Sciences. In addition, he has cooked for some of the world’s leaders from China’s Central Government, a British Premier, as well as an assortment of celebrated politicians from around the world, which has contributed to his rich experiences from being in the kitchens of top restaurants from all over Southeast Asia. His desire to be innovative whilst still blending traditional Chinese flavours is what makes his cuisine so sought after by discerning diners from around the world.
