Joseph Spiteri named new Executive Chef at BayWater Resort, Koh Samui

Joseph SpiteriGroup Executive Chef Raffaele Dadone of The Unique Collection of Hotels & Resorts is pleased to announce the appointment of Chef Joseph Spiteri as the Executive Chef at BayWater Resort, Koh Samui.

Born and raised in Malta in the middle of the Mediterranean Sea, Chef Spiteri brings, along with his passion for cooking, more than 10 years international experience and expertise on Italian and Mediterranean cuisine to his new role as Executive Chef at The BayWater Resort Koh Samui.

He joins The BayWater Resort from his most recent position as Executive Chef of The Steakhouse at Pai Village, Pai, Mae Hong Son, Thailand. Prior to moving to Thailand, Chef Joseph Spiteri worked for several restaurants and hotels in Malta including Pulitos Restaurant as Chef Patron & Restaurateur; Patrick’s as Sous Chef/Head chef; Aztec Restaurant as Sous Chef. Before that he worked at Granby Hotel, Northfleet in Kent, United Kingdom as Commis Chef.

“I fell in love with Thai people, Thai food and its culture and that’s the reason I moved to Thailand. My mission is to creatively deliver the excellent dining experience to all guests with new culinary ideas by incorporating traditional Mediterranean influences and best local ingredients on the island in the restaurant’s concept.” he said.

His new role at The BayWater Resort Koh Samui will give him the opportunity to use his extensive culinary knowledge and expertise on Mediterranean cuisine to develop the concept of the BayWater Restaurant and Fish Market Style Seafood Restaurant, whilst creatively developing the signature dishes and menus with the combination of Authentic Thai and Traditional Mediterranean influences utilising the best quality ingredients.
