Kevin Erving new Executive Chef at Four Seasons Vail

Four Seasons Resort and Residences Vail announces the appointment of Kevin Erving as its new Executive Chef.  Chef Erving, a Four Seasons veteran of 23 years, will be overseeing all of the Resort’s culinary operations including its 121 room property and three restaurants: Flame Restaurant, Fireside Lounge and Bean & Gone.

Chef Erving joins Four Seasons Resort Vail following a three-year Executive Chef position at Four Seasons Resorts Lanai in Hawaii, where he oversaw two properties: Four Seasons Resort Lanai at Manele Bay and Four Seasons Resort Lanai, The Lodge at Koele. Prior to Hawaii, Chef Erving worked as the Executive Sous Chef at Four Seasons Hotel Vancouver as well as The Ritz-Carlton Chicago, A Four Seasons Hotel. Before his experience in Chicago, Chef Erving held various culinary positions at Four Seasons Hotel Seattle, where he began his career more than 20 years ago.

Hailing from the Pacific Northwest, Chef Erving is an expert in farm-to-table cuisine and is passionate about keeping an emphasis on seasonality and sustainability. He has mastered the incorporation of local and regional flavours into cuisine, a skill he brings to Four Seasons Resort Vail. Through his expertise, passion and industry knowledge, Chef Erving will continue to showcase the local fare and indigenous ingredients that the region offers, while working with and overseeing the talented culinary team at the resort.

Chef Erving will be joined in Vail by his wife and two children following his start date in early September. He and his family love to camp, fish and create the ultimate ice-cream flavours together – passing down his culinary passion to his children.
