Viceroy Riviera Maya has announced the appointment of Paloma Carvajal to the position of chef de cuisine, with responsibility for all of the resort’s restaurants and dining events.
Ms. Carvajal comes to Viceroy Riviera Maya with experience in leading restaurants in Spain and six years with top hotels in Mexico. She assumes responsibility for: La Marea, serving high-end Mexican cuisine that melds tradition with innovation and new interpretations and techniques; the seaside Coral Grill, preparing a Mexican-Mediterranean menu cooked on wood-burning grills; the specialty themed weekly dinners including the Antojería of Mexican street foods and the Beach Barbacoa; and weddings and banquets.
In Madrid, Paloma worked with star Spanish chef Juan Pablo Felipe at One-Michelin-Star El Chaflán, as well as sister restaurant Restaurante El Mirador de Juan Pablo. In Mexico, she served on the culinary staff at the Fiesta Americana Hacienda Galindo in San Juan del Rio, Querétaro, and most recently, kitchen supervisor at the Capella Resort & Spa Ixtapa.
She graduated in 2007 from the International Culinary School in Toluca with a B.A. in gastronomy and food and beverage administration, and participated in a Culinary Training Program at the San Angel Inn in the Mexico Pyramid at Walt Disney World’s Epcot Center in Bay Lake, Florida.
