Gilbert Bolivar new GM of Bull and Bear Prime Steakhouse – Waldorf Astoria New York

Waldorf Astoria New York has appointed Gilbert Bolivar as General Manager of Bull and Bear Prime Steakhouse.  Bolivar brings nearly 15 years of hospitality and culinary experience to the Waldorf Astoria’s famed steakhouse.  Bolivar will lead the Bull and Bear team with innovative restauranteur insight while further cultivating the high level of service the restaurant is known for, an extension of True Waldorf Service.

With a vast understanding of restaurant openings and food and beverage operations within casinos, resorts and culinary operations, as well as independent restaurants, Bolivar is poised to enhance the status of Bull and Bear Prime Steakhouse as a distinct location and one of the top steakhouses within the Manhattan restaurant community.

 “Bolivar’s extensive experience in the food and beverage industry, especially with hotel properties and steakhouses, is an ideal fit for Bull and Bear,” said Executive Chef David Garcelon.  “His leadership will foster and inspire our hospitality and culinary excellence.”

 A Miami native, Bolivar’s restaurant management career began in 2002 at Mangos Tropical Café one of the most recognized nightclubs in the South Beach FL.  He has since held several management positions with some of the top groups in the industry to include; Texas de Brazil Restaurant Group, the Doral Resort and Spa (now known as Trump National Doral Miami), and the Renaissance Vinoy Resort & Golf Club.  Bolivar has been responsible for multiple food and beverage operations and new restaurant openings in several cities throughout his career.  In 2009 Bolivar joined B.R Guest Hospitality in partnership with Starwood Capital & Caesars Entertainment as general manager responsible for opening and managing locations in St. Pete Beach (Florida), Atlantic City and New York.  Most recently Bolivar was with Darden Restaurants and the Capital Grille Steakhouse at their highest grossing restaurant in New York City.
