Seattle Marriott Waterfront welcomes new chef at Hook & Plow Restaurant

The Seattle Marriott Waterfront plans to raise the standard of dining at its Hook & Plow restaurant with the hiring of Chef Jim “Goody” Goodman.

Jim Goody GoodmanA talented culinarian who has competed in and won multiple competitions over the years, Goodman joins the Marriott team from Shipyard Brewery, where he was executive chef for the East Coast brew pub chain.

Goodman first unearthed his passion for cuisine as a young dishwasher, moving up through the ranks of small restaurants and learning the art of cooking along the way. After a brief stint at The University of Delaware studying mechanical engineering, Goodman said he realized that a career in the culinary field is what he wanted to pursue. Goodman enrolled in a community college culinary program and then, after a semester, committed to the Culinary Institute of America. For his externship, Goodman was given the opportunity to work at the New Orleans Marriott, making lifelong connections that lead to a position at the JW Marriott and Ritz Carlton Grande Lakes in Orlando, FL, after graduation.

Over the next seven years, Goodman moved through the ranks and discovered his unique love of barbeque, butchering and charcuterie. Developing this niche, he started an upscale barbeque banquet menu and butchering/charcuterie program, and then competed in the American Royal BBQ competition in Kansas City. Goodman has participated in the competition eight times, winning three ribbons, including one first-place honour ribbon. He has also participated in two Memphis in May barbeque competitions, placing in one.

Hook & Plow celebrates the local bounty with breakfast, lunch and dinner menus that take inspiration and guidance from the seasons. In the morning, diners enjoy smoked salmon and Dungeness crab eggs benedict with Wilcox Farm eggs, Cascioppo Bros. sausage, house-made corn beef hash and fried egg skillet and grilled New York steak and eggs along with favourites including Brioche french toast, Belgian waffles, egg white frittatas and buttermilk pancakes with mixed berries. Lunch includes Penn Cove mussels, Oregon Dungeness crab cakes, fish and chips along with favorites including flat-bread pizzas, sandwiches and salads. Patrons can enjoy a full-service meal at dinner with items such as oysters on the half shell, white bean hummus, fresh Angus burger, roasted chicken breast, fettuccini, smoked pork chop, salads, sandwiches and flat-bread pizzas.  

Each meal also features blackboard specials, giving diners a chance to savor the fresh pick of the day that can be grilled, fried, baked or blackened. Top off any meal, try the decadent chocolate cake, lemon meringue pie, apple tart or tiramisu.

The Seattle waterfront restaurant is known for its prime waterfront location near Pike Place Market and scenic views. In the evenings, guests can enjoy a variety of craft beers and artisanal wines on the outdoor patio.
