MGM China has announced its first restaurant for MGM COTAI, which will be Asia’s first Nikkei cuisine offering in collaboration with internationally renowned celebrity chef Mitsuharu Tsumura.  AJI will showcase Nikkei cuisine, a new culinary trend sweeping the globe. This collaboration is the beginning of a host of diversified dining experiences specially crafted to enhance customers’ experiences for the upcoming MGM property.

Nikkei cuisine, the art of preparing Peruvian ingredients with Japanese cooking techniques, started shinning with Chef Mitsuharu Tsumura whose roots make him the perfect ambassador of this unique cuisine. Of Japanese origin, Chef Mitsuharu was born in Peru and honed his authentic Japanese cooking techniques in Osaka. Mitsuharu’s craftsmanship is showcased in his award-winning restaurant, Maido, in Lima. The Nikkei cuisine concept is already in most of the capitals around the world and AJI at MGM COTAI will be Asia’s first offering of this delicacy.

AJI, which literally means “chili” in Spanish and “flavor” in Japanese, will offer new exotic flavors to the most discerning palates. The restaurant will feature a ceviche bar, hibachi grill and a Pisco bar, offering a selection of sakes, shochu and fine wines. With this new concept, MGM COTAI, slated to open by Q4 of 2016, is bringing a new punch to the Macau culinary scene.

On the partnership, Hans Hordijk, Vice President of Food & Beverage, said, “With the opening of MGM COTAI on the horizon, we intend to introduce exclusive and fresh experiences to our international guests and locals. We are honored to have Chef Mitsuharu Tsumura on-board with us to kick-start a kaleidoscope of unparalleled gastronomic offerings at our new property. We anticipate the cuisine, now popular in the culinary capitals around the world, to become a smashing success in Macau as well.”

This amazing new food trend brings together two countries, Peru and Japan. It’s an honor and a pleasure to be part of this project with MGM. Get ready to experience the Nikkei world of Peruvian cuisine!”
