Deeply soaked in his country’s heritage, JosŽ Meza has a passion for traditional ingredients, creating an intimate connection with the land, sea and nature he finds around him. Regional and local suppliers are sourced and nourished, providing fresh and classic produce from which he takes his inspiration.

Traditional and native ingredients are the basis for his modern and cutting edge recipes, reinterpreting classic dishes whilst at the same time redefining his country’s gastronomic future. Carolina’s culinary offering shows pride in traditional and cultural values, and a vision and philosophy that will change the future for Mexican cuisine as we know it.

JosŽ Meza was born in Mexico City, where from a young age he discovered a passion for cooking, spending Sundays in his grandmother’s kitchen. His career began at the age of 17, working in the busy restaurants of Mexico’s hospitality industry. After earning his degree in gastronomy at CESSA, San çngel, he began his culinary journey under the tutelage of chefs such as Martin Berasategui (3 Michelin Stars), Bart de Pooyer (2 Michelin Stars) and Rene Redzepi at Noma in Denmark, ranked No. 1 in the world by the prestigious San Pellegrino Restaurant list.

JosŽ Meza later returned home, forming part of the kitchen team at world famous Pujol, where under the watchful eye of Chef Enrique Olvera, he develop his passion for traditional ingredients, learning the techniques and recipes that would forge his love of Mexican cuisine.ÊAt the age of 24 he was offered the opportunity to lead a new Enrique Olvera project, this time in San Miguel de Allende, opening the much acclaimed Moxi.

With his arrival at The St. Regis Punta Mita, JosŽ Meza plans to launch restaurant Carolina to new heights. His unique gastronomic offering tells a story of a culture rich in in culinary heritage and tradition, whilst at the same time redefining the future for Mexican cuisine as we know it.
