Caravelle Saigon is, once again, recognising talent from within this month with Darren Watson moving into the role of Executive Chef for the famed hotel in the heart of Saigon. Darren’s career has taken him around the world, leading him to his previous role as Executive Sous Chef at Caravelle Saigon in early 2010.

Prior to landing his role with Caravelle, Darren served as the Senior Sous Chef at the Langham in Auckland, New Zealand along with time spent in Australian cities such as Melbourne and Sydney. Working at Fenix and Richard Pratt’s private mansion before moving to Aria in Sydney, Watson has now become a sought-after name in the culinary world. During Darren’s time in Scotland, he worked in a variety of roles at some of the UK’s most famous restaurants. From Sous Chef at The Witchery By The Castle to Senior Sous Chef at the Prestonfield House and Head Chef at La Garrigue.

“Caravelle Saigon is extremely pleased to announce Darren’s ascension to Executive Chef, his creativity and passion towards the culinary art has long been seen in Reflections and we look forward to seeing his culinary style replicated throughout the hotel restaurants and banqueting events” commented Michael Robinson, General Manager.
