Three-Michelin-starred Chef Daniel Humm of Manhattan restaurant Eleven Madison Park is set to return to the Baur au Lac in Zürich for a special pop-up dinner series. From March 17th to the 21st, Humm will host nine-course lunches and dinners with his former colleague Laurent Eperon at the hotel’s Pavillon Restaurant, where both Humm and Eperon spent formative years as chefs. While Eperon stayed and led Pavillon to world-class success – the restaurant was last year awarded its second Michelin star – Humm ventured across the pond and achieved celebrity status with the launch of several award-winning restaurants. This event marks a culinary reunion at the home of two of the world’s greatest chefs, inviting guests to experience Humm’s innovative and refined cooking using locally-sourced ingredients.
Honoring the long-lasting connection between the Baur au Lac and the Children’s Hospital Zurich, at noon on March 18th outside the Baur au Lac, Humm will serve his signature Humm Dogs in collaboration with Zürich’s BÜRKLI Beiz + Kiosk in Bürkli square, donating all earnings from the event to the Children’s Hospital Zürich and the Kinder-Spitex of canton Zurich, a children’s medical care program.
Starting at 7pm each night, Humm will offer a menu of nine courses plus mignardises, and a wine pairing selected by Marc Almert, the Association de la Sommellerie Internationale (ASI) Best Sommelier of the World 2019, will be available for an additional charge. The menu will include Chef Humm’s signature honey and lavender roasted duck from Eleven Madison Park as part of the offerings, and will also be available for lunch on Friday and Saturday, March 20th and 21st.
Born and raised in Switzerland, Humm discovered his love of cooking at the age of 14, going on to work at some of the finest restaurants and hotels in the country (including the Baur au Lac). With an unwavering drive and passion for innovative cuisine, Humm was awarded his first Michelin star at the age of 24 at the Gasthaus zum Gupf restaurant in the Swiss canton of Appenzell. There, he was discovered by Paul Zuest, a Swiss hotelier who brought Humm to the US in 2003. Humm became the executive chef at Campton Place in San Francisco before establishing himself as a leading name on the New York restaurant scene as chef and owner of Eleven Madison Park, named world’s best restaurant in 2017 by The World’s 50 Best Restaurants. Daniel Humm recently opened the much-anticipated Davies and Brook restaurant at Claridge’s – his first London restaurant – adding to his stellar portfolio.
Humm’s visit comes on the heels of the recent opening of the hotel’s modern brasserie, Baur’s, which is poised to be the city’s hottest restaurant for 2020. The trendy eatery serves elevated contemporary fare (with plenty of vegetarian and vegan options) and is designed in collaboration with Martin Brudnizki Design Studio (whose portfolio includes Sexy Fish and Soho House in London).
