Experimental Group takes over UNESCO heritage hotel

Sabbaba MontesolExperimental Hotel Group opens Sabbaba Montesol, Ibiza, a new restaurant concept at the end of July 2021, following an extensive redesign by Dorothée Meilichzon, the award-winning French hospitality designer behind some of the most buzz-worthy bars, hotels, and restaurants across the globe.

Sister restaurant to Balagan Paris, the Sabbaba Montesol will house 60 seats in the main restaurant, 90 seats on the terrace on Vara Del Rey, and 120 seats on the rooftop, with standout views overlooking Ibiza old town and the port. Sabbaba derives from Hebrew, conveying a way of life. It can translate to “no worries”, “it’s all good” and “awesome”.

The opening of Sabbaba Montesol restaurant and bar is the first stage in the transformation journey of the 5 star landmark hotel Gran Hotel Montesol, Ibiza. The Experimental Hotel Group has completely redesigned the restaurant and bar, with plans to renovate the heritage hotel – Ibiza’s first hotel on the island open since 1933 – early next year.

Head Chef Tomer Amedi, who is known for founding renowned Israeli eatery, The Palomar, in London, will serve diners inventive Israeli cuisine from the open kitchen and robata grill. A Middle Eastern twist to Spanish tapas using fresh produce, dishes will be tasty, energetic and colourful. A joyful gastronomy born from the adaptation of every tradition brought from the diaspora, Tomer believes a good eating experience evokes all the senses.

The wine list comprises a carefully picked selection, from the smallest Spanish bodega to the biggest names, ranging from countries bordering the Mediterranean Sea. Sabbaba Montesol will serve food and drinks daily from 7.30pm to 3am, offering guests lunch, brunch, dinner and drinks.

This is the first step in our renovation journey of this fantastic heritage hotel. In addition to our newly designed restaurant, we welcome the talented Tomer Amedi as our head chef. We cannot wait for guests to experience his inventive new menu and the exciting selection of cocktails in the bar. ”

Stage two of the renovation will be the launch of the new Gran Hotel Montesol hotel. The hotel, a UNESCO Property of Cultural Interest, officially listed as a Bien de Interés Cultural by the Spanish Ministry of Culture, will close in 2022, as the thirty-three rooms are refurbished.  Initially constructed during an era marked by global industrialization following World War I, Gr  an Hotel Montesol Ibiza was used by the Spanish government as a military barracks during the Spanish Civil War and World War II. Countless people have stayed at the Gran Hotel Montesol Ibiza since its’ opening, including Orson Wells and Princess Caroline of Monaco.

Located just off the main strip of the Paseo Vara de Rey, the boutique hotel is a short distance from the historic Dalt Vila neighbourhood, a UNESCO World Heritage Site since 1999.

The Experimental Group was founded by Olivier Bon, Pierre-Charles Cros and Romée De Goriainoff, three childhood friends with a taste for innovation and expanding the team in 2010, Xavier Padovani came on board as the group’s fourth partner. Still celebrated for bringing the cocktail bar culture to Paris, the group’s offerings now encompass their signature speakeasies, wine bars, restaurants and hotels in Paris, New-York, London, Ibiza, Menorca, Venice and Verbier (all currently open to the public, with Experimental Chalet in Verbier opening July 1st).
