The Inn at Mattei’s Tavern, Auberge Resort Collection, a new luxury resort opening in Los Olivos in Spring 2022, announces the appointment of two key team members. Dave Elcon, who has been with the Auberge Resorts Collection family since 2019, will oversee operations as the hotel’s General Manager, and Rhoda Magbitang will lead the culinary charge as Executive Chef.
Both will play essential roles in the opening of The Inn at Mattei’s Tavern, with Elcon demonstrating the Auberge culture by bringing the brand’s unique blend of inspired luxury and one-of-a-kind experiences to the region, and Magbitang creating a culinary destination that compliments the incredible wine scene of this destination, with an emphasis on connection through the universal language of food and drink.
With over 15 years of luxury hospitality experience, Dave Elcon’s appointment stems from his success within Auberge Resorts Collection over the past three years. He quickly became a key contributor to the leadership of the brand and has been instrumental in the success of the many properties he has overseen during his tenure. In this new position, Dave will oversee all operations for the 6.5 acre property. Prior to The Inn at Mattei’s Tavern, he held positions with Solage, Auberge Resorts Collection and Vista Collina Resort, both located in Napa Valley. He is an avid fitness enthusiast, loves the outdoors, and most of all spending time with his wife Anne and 4-year-old daughter, Audrey.

As the new Executive Chef for The Inn at Mattei’s Tavern, Rhoda Magbitang has quickly ascended through the ranks of the food & beverage industry, from starting in the Philippines cooking for her five siblings as part of her daily chores, to working for the likes of Jose Andres and Susanne Goin. Her first Executive Chef role was at the iconic Chateau Marmont, and most recently she held the same role at Petit Ermitage in Los Angeles. A sought-after culinary destination unto itself, all of Mattei’s Tavern dining venues share a single thread: fresh, local California food with influences of ranch life.

Opening Spring 2022, The Inn at Mattei’s Tavern will feature 67 luxury guest rooms and cottages that blend the simplicity of modern farmhouse design with the eclectic style of nearby ranch life. Guests will enjoy a culinary program that elevates the Central Coast and celebrates the seasonal flavors of Los Olivos at an open-air destination restaurant. The Inn will include an outdoor pool with a welcoming poolside bar, cabanas and firepits, a signature spa, and modern indoor-outdoor event spaces that perfectly suit weddings and other gatherings that desire a sophisticated, country-inspired setting.
