
Omni Amelia Island Resort & Spa today announced the appointment of Kiki Swayne as Executive Pastry Chef. In this role, Swayne will oversee the resort’s pastry program, leading the creation of desserts and specialty confections across the resort’s dining venues, banquets and special events. Drawing inspiration from her Hispanic heritage and classical pastry training, Swayne brings an innovative culinary vision to the resort.
Born and raised in Puerto Rico, Swayne draws inspiration from her rich cultural heritage, incorporating globally inspired flavors and techniques into her pastry creations. She earned a Baking and Pastry Diploma from the San Juan Hospitality School and began her career at leading resort properties throughout Puerto Rico. After relocating to Florida in 2009 to continue her education at Le Cordon Bleu, she held pastry leadership roles at premier resorts across the state and has called Amelia Island home since 2012.
Known for her inventive approach to pastry, Swayne creates desserts that blend classical techniques with unexpected ingredients and international influences. As Executive Pastry Chef, she looks forward to elevating the resort’s pastry program with memorable offerings that celebrate both tradition and innovation.
