Omni Mount Washington Resort is proud to announce the appointment of Daniel DeFusco to the position of Executive Chef. Chef Daniel will oversee the resort’s award-winning dining establishments and further cement the property’s status as a culinary destination in New England. He will also oversee new menu developments at select dining establishments at the resort including Rosebrook Bar, Observatory Bar, Main Dining Room, Sun Dining Room, Stickney’s Restaurant, Rosebrook Lodge at Bretton Woods, Bretton Arms Dining Room & Wine Bar and more.
With over 20 years of experience, Chef Daniel has managed a variety of restaurants and food programs within the hospitality industry. After receiving his Associate of Arts degree from Indiana University of Pennsylvania Academy of Culinary Arts, Chef Daniel began his career in 2001 as Senior Sous Chef at Pinehurst Resort & Country Club in North Carolina where he quickly progressed into the role of Chef de Cuisine. Upon leaving Pinehurst, Chef Daniel continued his culinary journey in Crested Butte, Colorado as a Sous Chef at Elevation Hotel & Spa. He later then played instrumental roles in the food operations teams at Hershey Country Club and Callaway Resort & Gardens until 2019, and most recently at Marriott Meadow View Conference Resort & Convention Center.

In his new role as Executive Chef at Omni Mount Washington Resort, Chef Daniel will uphold the property’s reputation as a destination for fine dining while using his creative spirit and diverse culinary background to develop some of the finest food and beverage offerings in New England.
Executive Chef Daniel will also launch new menus at four-diamond, fine-dining Bretton Arms Dining Room & Wine Bar located at Omni Bretton Arms Inn; Rosebrook Lodge at Bretton Woods located at the top of the Bretton Woods Skyway Gondola and offering stunning panoramic views of Mount Washington and the Presidential Range; and restaurants at Omni Mount Washington Hotel, including the recently renovated Main Dining Room serving New England-inspired menus with a twist in a century-old classic atmosphere; the stunning, ivory adorned Sun Dining Room adjacent to the Main Dining Room; the new rooftop Observatory Bar featuring comfortable seating areas, games and seasonal heated and shaded spaces; Rosebrook Bar offering light fare and beverages just off the main lobby; and high-end steakhouse that meets gastropub Stickney’s Restaurant & Pub, which was the hotel’s former billiard room.
Chef Daniel currently resides in Whitefield, New Hampshire with his wife, son and daughter. In his personal time, Chef Daniel enjoys spending time with his beloved family, exploring new woodworking techniques and rooting for his hometown football team, the Philadelphia Eagles. Having spent several years working in the South, Chef Daniel relishes in comfort foods that are smoked, braised and require patience.
