Massimo Bottura’s Torno Subito is expanding from Dubai to Miami. Chef de cuisine Bernado Paladini will leave the Dubai restaurant to work in the US outlet, while his fellow Italian Alessio Pirozzi steps in the emirate.
Pirozzi comes to Dubai with plenty of experience in top kitchens. One of his first professional roles was with Hotel Mirage in Cortina d’Ampezzo, where he was commis and later chef de partie. He then moved to Norbert Niederlkofler’s Hotel Rosa Alpina as commis chef.
Leaving Italy to work in Germany, Spain and the UK, he continued to specialise in Italian cuisine. His travels took him to The Grill At the Dorchester by Alain Ducasse, The Wellesley Knightsbridge, A Luxury Collection Hotel and Four Seasons in Beijing.
