
InterContinental Sydney Coogee Beach begins welcoming guests today, marking the arrival of Sydney’s first luxury hotel positioned directly opposite Sydney’s Coogee Beach. The reimagined hotel features 198 rooms and suites, many offering sun drenched interiors and expansive ocean views, creating an elevated new base for beachfront living.
Marking an exciting addition to the Eastern suburbs dining and hospitality scene, the hotel is today also opening the doors to Shutters Restaurant and Bar, the hotel’s new-look in-house restaurant. A full reveal of the infinity swimming pool, Day Spa, pickleball courts and Club InterContinental will be unveiled in the coming months.
Newly appointed Executive Chef, Stephen Lech leads the culinary direction of Shutters Restaurant and Bar with a menu that feels sunlit, generous and uniquely Australian with a Mediterranean influence. Bathed in natural light, the dining room takes its character from the hotel’s original shutters which cast gentle shadows across warm neutrals, natural textures and ocean toned accents. Mornings bring barista coffee, freshly baked pastries and breakfast favourites prepared with local produce. As the afternoon light shifts, guests can enjoy spritzes and small plates before transitioning into an intimate evening dining experience with elegant dishes complemented by wine and conversation.
Designed and intended to be a dining destination that is just as much for the locals as it is for hotel guests, Shutters Restaurant & Bar is poised to become a new neighbourhood favourite – relaxed enough to wander into after a morning beach walk and polished enough for a special occasion.

We’re incredibly lucky to have such beautiful produce, especially seafood right on our doorstep, and with the outlook we have over Coogee Beach, it makes sense to be heroing these flavours. Together with the team, we’ve created a menu designed to share and change with the seasons. Coogee has this lovely, easy rhythm to it, and I wanted the food to feel the same – fresh, generous and not over-complicated. If you’re sitting here with a plate of burrata, heirloom carrots, barbequed King Prawns and a sea breeze drifting in, that’s exactly the kind of experience I hope people have.”
