Vessel debuts as Baltimore Peninsula’s newest bar & lounge

Today, the Baltimore Peninsula development team, led by MAG Partners and MacFarlane Partners with investments from Sagamore Ventures and Goldman Sachs Asset Management Urban Investment Group and Method Co., the nationally-acclaimed hospitality company, announced the opening of Vessel, bar, lounge and event space located within ROOST Baltimore inspired by the city’s nautical heritage.

Vessel is Method Co.’s second culinary concept in Baltimore, following the recent opening of Little Wing, a cafe and general store located adjacent to ROOST Balitmore’s lobby, expanding on the company’s current award-winning restaurant & bar portfolio, which includes esteemed restaurants like Philadelphia’s Wm. Mulherin’s Sons and HIROKI, and Charleston’s Lowland, along with highly-lauded cocktail bars, including Simmer Down in Wilmington, DE, and The Aladdin Sane in Detroit, and several boutique hotels in markets including Wilmington, Delaware; Detroit, Philadelphia, Charleston; and Atlanta. 

Vessel’s design aims to create a sophisticated and inviting atmosphere for guests. Designed in collaboration between Method Studios, Method Co.’s in-house design firm, and Aumen Asner, the space marries a contemporary aesthetic with classic elements, evoking vintage maritime details. The interiors showcase high-lacquered mahogany wood reminiscent of vintage boat interiors, porthole motifs, and subtle collegiate touches creating a sophisticated yet welcoming atmosphere, in addition to featuring an indoor-outdoor bar, pool table, outdoor cabanas, and stunning views of the Patapsco River.

Taking cues from Vessel’s nautical interiors, the food and beverage program leans into the maritime lifestyle. Culinary Director Brinn Sinnott, who also led menu creation at Method’s culinary concepts Le Suprême, Sakazuki, and Hiroki-San in Detroit, has crafted a menu inspired by ports all over the world featuring flavors and dishes from the Mediterranean, Asia and the Eastern Seaboard. The beverage program complements these offerings with a selection of tiki cocktails, including classics like the Painkiller and Mai Tai, as well as original creations such as the Oaxacan Vice, which blends strawberry-pineapple rum, lime cordial, and burlesque bitters, and the Wonder Boy, a mix of rye, banana, Frangelico, and orgeat. Guests can also enjoy a curated wine list, local craft beers, and a full bar offering a wide range of options. Vessel’s dedicated team will also be available to support a variety of private events, ranging from intimate gatherings to larger occasions.

ROOST Baltimore officially opened in July 2023, following a ribbon-cutting ceremony with Governor Wes Moore. The 81-room property offers a boutique experience with apartment-style living, creating a temporary living environment ideally suited for today’s travelers. Both short-term and long-term guests can be accommodated at ROOST Baltimore. Designed by architecture firm Hord Coplan Macht, ROOST Baltimore features a mix of furnished, design-forward studio, one-, two- and three-bedroom apartment hotel units with interiors designed in collaboration between interior design firm Aumen Asner Inc. and Method Studios, Method Co.’s in-house design firm.
