Substance Restaurant & Bar has opened in the new Murdoch Square, on the first floor to the newly-opened Courtyard by Marriott Perth, Murdoch Hotel. The all-day dining venue sees the fusion of the contemporary, artisanal café-style menu with an Asian bistro, in combination with an elevated grab-and-go offering catering to visitors to Murdoch Square.

Built on the pillars of natural ingredients, natural materials and natural identity, the health-centric focus of Substance Restaurant & Bar will celebrate Western Australia’s local produce. A selection of premium grill items including scotch fillet, Wagyu rump MS 9+ and lamb racks will be available, alongside crocodile spring rolls, seafood yellow curry and the restaurant’s signature chicken and shitake mushroom roll, meaning there’s no shortage of choice for diners. The menu will also feature a selection of gluten-free, vegan and vegetarian options, including outstandingly fresh salads, stuffed field mushrooms and charred Asian greens.

Nestled in Murdoch, and just 10 minutes south of Perth’s Central Business District, Substance Bar & Restaurant is conveniently located for the enjoyment of Perth locals and visitors alike. Guests can expect an à la carte menu and dining experience that caters to all occasions, from business lunches to weeknight family dinners, catch-ups with friends to milestone celebrations.

The menu will also boast concise “Grab & Go” options, blending locally-sourced produce to deliver nutritious and ethical tasty food, alongside craft beverages. Guests can expect a selection of gourmet sandwiches, Banh mi variations, artisanal paninis and breakfast choices.

Head Chef Mochsin Fam will oversee the hotel’s culinary concept and operations with the entry of Substance Restaurant & Bar into the Perth market. Mochsin has worked at Marriott International for over six years, including most recently as Executive Sous Chef and Banquet Head Chef at Aloft Perth Hotel. Mochsin has also worked for Carriley Estate and Sanno Marracoonda Hotel as Head Chef.

The space design of Substance Restaurant & Bar takes an inspired classic direction, adhering to biophilic design principles to enhance the well-being of up to 86 diners. Further, the venue offers a secluded private dining space for more intimate gatherings, in addition to the option of being privately hired, by request, for up to 180 guests.
