Sant’olina, a new rooftop dining experience

Sant'olinaJohn Terzian & Brian Toll (co-owners of The h.wood Group) debut Sant’olina, their newest pop-up outdoor dining experience perched atop the legendary Beverly Hilton, offering a melting pot of Mediterranean cuisine with a Southern California vibe. 

Chefs Michael Teich, David Johns and SLAB’s Burt Bakman combine vibrant herbs and spices to create a healthy menu packed with flavor. Each dish tells a different story – from the traditional recipes straight out of the Tel Aviv shuks to the modern Californian touches. With its timeless Mediterranean color palette and open-air views of Los Angeles from The Beverly Hilton’s expansive rooftop, Sant’olina captures the essence of a seaside escape. Sant’olina will offer dinner service nightly and brunch service on weekends.

Terzian and Toll said, “We are excited to introduce this unique dining concept.  We created Sant’olina for our family & friends to experience a tasteful escape to the Mediterranean paradise with the impressive open-air views of Los Angeles.”

Sant’olina’s menu includes a vast variety of flavorful Mediterranean cuisine through the lens of Southern California. By utilizing seasonal & local produce, Teich, Johns & Bakman created an array of bright, vibrant, healthy & vegetable forward options such as a savory Salatim line up paired with warm Za’atar Laffa Bread, such as Mujadarra, Halumi, Cauliflower Tabbouleh, Israeli Salad, Chickpea Matbucha, and plateful Mezze entrees like Lemonfish Crudo, Zucchini Keftedes, Borekas, Pacific Oysters, and Harissa Cured Salmon.

Chef Teich comments, “I believe the climate, produce, and sensibility of California cuisine, line up perfectly with the tastes and flavors of Israel, and the Mediterranean as a whole.”

The Beverly Hilton, which recently completed a $35 million property-wide hotel renovation encompassing The Penthouse Collection and Presidential Suite, guest rooms and public spaces, and a new cabana lined pool experience, is a staple of the LA landscape nestled at the crossroads of the iconic Wilshire and Santa Monica Boulevards. A retreat for celebrities and the world’s elite throughout its 65-year history, the hotel is home to world-class dining, luxurious accommodations, and is a landmark laced with Hollywood history.

Sant’olina is the latest to join the impressive portfolio of restaurants by The h.wood Group including Petite Taqueria, Mason Santa Monica, The NICE GUY, Delilah LA (Delilah Las Vegas opening Spring 2021 at The Wynn Las Vegas), SLAB and Harriet’s, along with their delivery-only concepts, Lilah’s, Mama’s Guy, Ela Ela Mediterranean and launching later in 2021, Beautiful Foods Vegan.
