
Raffles Hotels & Resorts and Fairmont Hotels & Resorts, two of Accor’s leading luxury brands, announce the appointment of Olivier Eynard as Global Vice President, Food & Beverage. Based in Dubai, Olivier will lead the development and execution of the global food and beverage strategy across both brands.
Olivier brings more than 20 years of international experience across luxury hotels, private members’ clubs and globally recognised restaurant brands. Most recently, he served as the Chief Operating Officer at RIKAS Hospitality Group, where he led a portfolio of premium lifestyle restaurants across the Middle East and Europe. During this time, he oversaw rapid expansion, opening and repositioning more than 20 venues while driving strong commercial performance.
Previously, Olivier held senior roles at The Arts Club and La Petite Maison, where he strengthened his expertise in destination dining, operational excellence and maintaining premium standards across international markets. His early career in European five-star hotels laid the foundation for a leadership style that blends luxury sensibility with operational discipline and financial rigor.
In his new role, Olivier will focus on further establishing the food and beverage as a defining pillar at the heart of the Fairmont and Raffles brands. His role will include aligning regional teams around a clear F&B vision, strengthening performance accountability, elevating destination-led concepts and investing in leadership development across the portfolio.
Olivier will oversee food and beverage operations spanning 121 hotels across the Fairmont and Raffles global portfolio, including award-winning restaurants, Michelin-starred dining destinations and collaborations with internationally acclaimed chefs. The portfolio features acclaimed venues such as Addison by William Bradley, The Savoy Grill by Gordon Ramsay, Little Miss India at Fairmont The Palm Dubai, Garrison at Fairmont Austin and Masala Library by Jiggs Kalra, among many other unique concepts across key cities. His appointment reinforces both brands’ longstanding commitment to exceptional culinary experiences and positions food and beverage at the heart of their continued evolution in luxury hospitality.
