In this role, Mays will utilize his wealth of knowledge, creativity and enthusiasm to oversee all culinary direction and operation for the hotel and its refined eateries, Zocca Cuisine D’Italia, Cafecito Café, the Pool Bar, In-Room Dining,and a robust banquet and catering program.
Mays brings more than 20+ years of specific focus in the luxury high volume hospitality segment combined with robust experiences spanning the US and beyond. The Westin Riverwalk, San Antonio welcomes the two-decade culinary veteran, from his position as Executive Chef at Caroline on 7th & Congress with White Lodging, and the Luxury Otis Hotel & AC in Austin, TX. Chef Mays’ impressive resume also touts 15 years’ time spent in the kitchens throughout The Ritz-Carlton Orlando Grande Lakes.
The seasoned chef connoisseur’s expertise also includes overseeing nine venues and a team over 90 at Lowes Royal Pacific Sapphire Falls at Universal team as their Executive Sous Chef. This experience led him to join Sodexo as the Executive Chef at the prestigious Rollins College and then on to becoming a personal chef for a billionaire family. Chef Mays has also consulted with various prestigious companies across the US. Throughout his established career, Chef Mays has proven his ability to create extraordinary dishes with a diverse flare, manage kitchen and staff, and to well exceed guest expectations.
