Working up through the leadership ranks in operations, finance, revenue management, and Sales & Marketing, Simon was promoted to his first GM role at the Courtyard Seoul in 2009, where he successfully opened the first Courtyard in South Korea.

In 2000, he had his first stint with Four Seasons joining as Executive Chef of the Four Seasons Ritz in Lisbon. Thereafter he had several Executive Chef appointments within Europe, South America and Russia.

The 600-room property, to be completed in 2016, marks the brand’s fourth Mexican destination.

Palace Resorts has announced its newest property, Moon Palace Jamaica Grande, the first Palace Resorts property located outside of Mexico. It’s scheduled for a $50 million facelift.

The hotel features 112 rooms and suites, meeting and conference facilities including a large conference room for up to 300 people, an outdoor swimming pool, a recreation area and seven boutiques.
