Baur au Lac unveils Marguita, a new mediterranean-inspired restaurant in the heart of Zurich

This summer, the iconic Baur au Lac in Zurich will debut a new restaurant housed in its former fine dining restaurant, Pavillon, with a renewed identity and exciting new culinary concept. The reimagined restaurant Marguita, designed by the highly-acclaimed Martin Brudnitzki who also masterminded the design of the hotel’s Baur’s Bar & Brasserie, will offer diners a new Mediterranean-inspired menu coupled with a sophisticated yet nostalgic ambience.

Now in its seventh generation of family ownership, Baur au Lac embodies Swiss hospitality teamed with a keen sense of innovation. Inspired by the Mediterranean tradition of naming a restaurant after significant women in the family, the Kracht family chose ‘Marguita’ – the name of both Andrea Kracht’s mother and daughter who is the current seventh generation owner of the hotel.

In a departure from the grand hotel tradition, Baur au Lac has adopted a more contemporary dining concept for the new restaurant with a more laid-back ambiance. Christian von Rechenberg, General Manager of the Baur au Lac, says “The new restaurant is designed from the guests’ perspective. It should be a place of well-being and relaxation. The guest should not be intimidated, as is often the case in current Michelin-starred restaurants but should have their wishes and needs fulfilled.”

Under the guidance of Head Chef Maximillian Muller, Marguita’s creative menu will feature much-loved Mediterranean classics with a contemporary spin – from fresh seafood and grilled meats to tempting pasta and risotto dishes. Award-winning Sommelier, Marc Almert has curated an expertly-crafted wine list that will compliment Chef Muller’s dishes. After fifteen years at Baur au Lac, Restaurant Manager Aurélien Blanc will head up the team at Marguita, ensuring the restaurant continues to operate at the highest level.

Marguita will also celebrate the feeling of warmth and togetherness so inherent throughout Mediterranean culture, reflected not only through the dishes but in the quality of service and laid-back friendly atmosphere. As well as welcoming Baur au Lac’s guests, Marguita aims to be a popular destination with Zurich locals, where family and friends can come together.

During the warmer months, guests will be able to dine on al fresco style on the hotel’s beautiful terrace, located within the Baur au Lac Parc with views onto Lake Zurich and the Alps. Lunch and dinner will be available daily.
