Pan Pacific Perth’s signature restaurant, UMA, has been recognised with the Contemporary Cuisine Award at the 2026 AHA Perth Airport Accommodation Awards for Excellence, further reinforcing its standing within Western Australia’s dining landscape. UMA is also a recipient of one Chef Hat from the Australian Good Food Guide, reflecting the consistency and quality of its culinary offering.
This recognition speaks to the clarity of UMA’s culinary direction. The restaurant brings contemporary South American cuisine to Perth through an experience that is both considered and immersive, underpinned by strong storytelling, technical precision and a genuine connection to local produce.
The AHA Awards are widely regarded as a benchmark for hospitality excellence across the state, celebrating performance across accommodation, food and beverage, service and operations. UMA’s recognition highlights the growing role that dining plays in shaping the overall guest experience within a hotel environment.
Under the leadership of Head Chef Javiera Gomez, alongside Executive Chef Xerxes Bodhanwala, the team has developed a menu that draws on the diversity of South America’s regions. Bold, confident flavours are balanced with Western Australia’s seasonal ingredients, supported by a continued focus on local producers, with ingredients sourced in line with Western Australia’s Buy West Eat Best programme, reinforcing a clear commitment to provenance.
The experience unfolds as a journey, taking guests through coastal, street and inland influences across Peru, Chile and Brazil, brought together through a contemporary lens and consistent execution.
“This is a meaningful and well deserved recognition for the team. UMA has been built with a very clear sense of direction, and that shows in the confidence and consistency of the experience. There’s a clear point of view behind it, and the team executes it with discipline and precision. The way local produce is brought together with South American influence gives it real substance and relevance in the market. I’m incredibly proud of what the team has created, and more importantly, the standard they continue to deliver every day,” said Rens Breur, General Manager, Pan Pacific Perth.
Following its recent multi-million dollar refurbishment, Pan Pacific Perth continues to evolve its positioning within the market, with UMA playing an integral role in shaping a more complete and compelling offering across accommodation, dining and events.
